The thing worth knowing

This is an air conditioner running every day of the year, including winter, because a cellar has to be held cooler than the house at all times. Insulation and vapour sealing decide the cost far more than the unit does: an uninsulated closet with a cooling head bolted to it can cost three times what a properly built cellar of the same volume does, for identical wine.
